Steamed Greens & Creamy Peanut Sauce

Any way you can add more greens to your diet is only ever going to benefit you, and if it takes a delicious and healthy sauce, well that is perfectly ok! I love a simple steamed green, especially when it's paired with peanut butter, I mean what could be better!

Any way you can add more greens to your diet is only ever going to benefit you, and if it takes a delicious and healthy sauce, well that is perfectly ok! I love a simple steamed green, especially when it’s paired with peanut butter, I mean what could be better.

Serve this as a side with your protein of choice, and prepare to wow your guests (or yourself). It goes very well with chicken or tofu.

INGREDIENTS
  • 1 bunch broccolini, steamed trimmed
  • 1 cup sugar snap peas, ends trimmed
  • 1 tbsp sesame seeds

Sauce
  • ½ cup peanut butter, natural
  • 2 tbsp tamari
  • 1 clove garlic, crushed
  • 2 tsp sesame oil
  • 2 tbsp fish sauce OR vegan alternative
  • ½ lime, juiced
METHOD
  1. Prepare the sauce by combining all ingredients in a small bowl with ¼ cup (60ml) water. It may seem like it’s not coming together, but keep stirring and it will become creamy. Alternatively you can add all ingredients into a blender or food processor.
  2. Heat a small amount of water in a pot with a steamer basket and lid. Bring to the boil then reduce the heat slightly. Add the broccolini and snow peas to the steamer and place the lid on, steam for about 4-5 minutes. You want the veggies to still be bright green. Remove from the heat.
  3. Spread the sauce onto a plate, you may have some leftovers. Place the steamed greens on the plate and top with sesame seeds.

Notes
  • Vegan option: Use a vegan “fish sauce”. I use this one from Niulife.
  • This recipe works with any nut butter.
