Crunchy Green Goddess Salad

If you haven’t eaten sprouted mung beans before, you must! They are these little crunchy morsels of nutritious goodness, offering vitamin C, folate, magnesium and more. If you didn’t know, sprouting is a process that actually enhances the bioavailability of nutrients.

On top of that, I’ve used a flaxseed oil pesto dressing in this recipe. Flaxseed oil doubles as a great source of plant-based omega-3s, while also being a neutral and slightly nutty oil that works very well in salad dressings. And I really love it.

This Crunchy Green Goddess Salad is the perfect plant based side or lunch dish to have you full and satisfied (from all that fibre and protein), and feel vibrant and beautiful. Although if you aren’t dairy-free, I highly recommend adding a crumble of feta to it too.

Crunchy Green Goddess Salad

A nutritious and vibrant plant based salad with creamy beans, crunchy sprouts and a parsley and flaxseed pesto.

INGREDIENTS
  • 1 cup canned white beans, drained and rinsed 
  • 1 cup edamame beans, defrosted 
  • 1 cup sprouted mung beans
  • 3 cups rocket 
  • ¼ cup roasted almonds, chopped 
  • Salt and pepper, to taste
 
Flaxseed & Parsley Pesto 
  • 1 bunch parsley, leaves and stems
  • 1 clove garlic, minced 
  • 1 lemon, juiced 
  • ⅓ cup Melrose flaxseed oil
  • ¼ cup roasted almonds 
  • ¼  cup nutritional yeast
METHOD
  1. Prepare the pesto by combining all ingredients in a small blender or food processor. Set aside. 
  2. In a large bowl, combine the white beans, edamame, mung beans and rocket. Add pesto to the bowl and toss to combine. You can add a touch more flaxseed oil if needed to loosen the pesto. 
  3. Top with roasted almonds and serve.

Do you buy sprouted mung beans or do you sprout them yourself? Do you buy then fresh or dried? Where do you buy them? I live in the Maryland, Washington DC metro area. There are Asian, Whole Foods, and some health food stores.

I buy them already sprouted, although you can sprout them yourself. I personally have never done it. They are in the fresh food aisle, normally with bean sprouts and salad ingredients. I think Wholefoods should have them!

Yes I meant to write edamame beans, not green peas! Although green peas would work perfectly too.
