Seriously Basic Green Salad

As the title states, this salad is seriously basic but these are the kinds of recipes I eat every day. I love making fancy Kelp Noodle Pad Thai and Coconut Flour Pizza but most days I just want a simple salad. I take a minimalists approach to food, and the second I ditched all the fancy condiments and expensive ingredients and just focused on really simple food – it made my food decisions so much easier and allows me to effortlessly eat well without too much over-complication.

INGREDIENTS
  • 1 tbsp extra virgin olive oil
  • ½ lemon juiced
  • ½ tsp Dijon mustard
  • Sea salt and pepper to taste
  • 5 cups mixed salad leaves (cos lettuce, rocket, spinach etc.)
  • ½ avocado
  • 1 tbsp hemp seeds
METHOD
  1. In a small jar combine the olive oil, lemon, mustard, salt and pepper and shake to combine.
  2. In a large bowl toss the leaves in the dressing, ensuring everything is coated and glossy.
  3. Serve topped with half an avocado and hemp seeds and extra salt and pepper to taste.
 
Notes
  • To make this a meal, I prefer to have a good source of protein so to this I would add 2 boiled eggs, a can of tuna or a serving of fish or chicken. If you are vegan, my favourite protein is hemp protein or tempeh.
