Using nutritious broccoli sprouts and crunchy combo to boost the nutrition of this salad, your guests will love you for this flavour packed satay noodle salad!

INGREDIENTS
Dressing
  • ¼ cup peanut butter 
  • 2 tbsp tamari 
  • 2 tbsp rice vinegar 
  • 1 tbsp sesame oil 
  • 1 clove garlic, crushed 
  • 2 tsp ginger, fresh, grated 
  • 1-2 tsp hot sauce OR sriracha 
  • 1 lime, juiced 
  • 1 tbsp hemp seed oil 
  • ¼ cup (60ml) coconut milk, canned
  • 2 tsp honey 
Salad
  • 1 zucchini, spiralled 
  • 2 cups snow peas, sliced 
  • 1 tbsp hemp seed oil 
  • Handful of Aussie Sprouts alfalfa sprouts
  • Handful Aussie Sprouts crunchy combo 
  • 1 tbsp sesame seeds, white OR  black
METHOD
  1. Prepare the dressing by placing all ingredients in a blender or combining thoroughly in a bowl.
  2. In a large bowl, add the zucchini and snow peas. Drizzle over half the dressing and 1 tbsp of hemp seed oil. Toss to combine.
  3. Serve with salad and top with alfalfa sprouts, crunchy combo and sesame seeds.
  4. Drizzle over extra dressing to serve
 
Notes
  • This recipe works with any nut butter.
  • Vegan option: Omit the honey or swap for maple syrup.
  • Sugar Free option: Omit the honey.
