Part of what I love about creating food is making something amazing from things that would have otherwise been thrown out, and since I love buying radishes, I just knew that surely there was something amazing that can be done with the leaves. So I went digging through the recipe books and found this one!

Radish Leaf Pesto

Part of what I love about creating food is making something amazing from things that would have otherwise been thrown out, and since I love buying radishes, I just knew that surely there was something amazing that can be done with the leaves. So I went digging through the recipe books and found this one!

I’ve adapted the recipe in the book slightly, mostly just in using less garlic and not fermenting it.

INGREDIENTS
  • 1 bunch radish leaves, washed
  • ½ cup hemp seeds OR pine nuts
  • ½ cup hemp seed oil OR extra virgin olive oil
  • 1 big punch of sea salt OR to taste
  • 2 cloves garlic
  • ½ lemon, juiced
METHOD
  1. Place all ingredients with ¼ cup (60ml) water in a blender and blend!
 
Notes
Store in a jar in the fridge for about 4–5 days.
