If you are eating deliciously healthy from-the-earth greens, you do not need a greens powder, and the truth is, a powder doesn’t replace real green vegetables.

Yes, even for kids! We don’t want to be teaching our children that they can eat junk as long as they consume an artificially sweetened miscellaneous green powder from a white tub. No thank you. We want our children to understand what green vegetables are, where they come from and, provided you cook them correctly, how amazing they taste, and how our bodies crave them (yes, this is possible!).

That said, I came across these dehydrated vegetable powders from Sunny Corner, and I thought why is no one else doing this! I discovered them at first because they are made by the farm that I get my certified organic vegetables from at the farmer’s market, meaning they can’t get more local!

Sunny Corner grow, harvest and dehydrate Australian Certified Organic (ACO) veg at source, using an advanced low temperature process proven to maximise nutritional preservation. So what you get is powders made from pure broccoli, cauliflower, beetroot, kale and Brussels sprouts.

So basically, if you do want a way to add more greens to your diet that isn’t fresh veg, I suggest these powders. Nutritionally speaking, they are as close as you can get to fresh!

In this recipe, I’ve used Broccoli powder in these delicious zucchini fritters!

Zucchini Broccoli Fritters

I often get asked about my recommendations for greens powders. In this recipe, I’ve used Broccoli powder in these delicious zucchini fritters!

INGREDIENTS
  • 3 medium Zucchinis
  • 1 tbsp coconut flour 
  • ½ cup parmesan, finely grated
  • 2 tbsp Broccoli Powder 
  • ¼ cup fresh parsley, chopped (optional)
  • ¼ teaspoon salt
  • 1 egg, beaten
  • Olive oil, for frying
METHOD
  1. Grate zucchinis into a colander and, using your hands, squeeze out as much liquid as possible. 
  2. Add to a bowl with coconut flour, parmesan, broccoli powder, parsley and salt. Toss to combine. 
  3. Stir through the beaten egg.
  4. Heat a large pan to a medium-high heat and pour in a generous amount of olive oil.
  5. When the oil is hot, shape 1/4 cup dough into flat rounds and fry. Flatten with your spatula in the pan, otherwise the middle won’t cook. 
  6. Cook for 7-8 minutes each side. Adjust the heat of burning or not browning enough, and add more olive oil if required.
 
Notes
  • Dairy Free option: Omit the cheese or swap for your favourite dairy free option.
