Spaghetti Squash “Noodles”

My inner teenager is so excited that I finally was able to try spaghetti squash. Until now I had never seen one in Australia. And after much research, this recipe came out on top as the best way to prepare this fabulous vegetable noodle.

Spaghetti Squash “Noodles”

You may be wondering what on earth is a spaghetti squash, and you are not alone. I’ve been reading about this mythical vegetable (or fruit?!) for over ten years. All of the US blogs and cook books use it but I have never even seen one in Australia, until recently when I saw one at my local farmer’s market. I couldn’t believe it! The time had come when I finally could try spaghetti squash. 

And it did not disappoint! Every time I see one at the markets now, which is normally around Autumn and Winter, I buy it.

This incredible squash, which looks a bit like a large melon (it’s that big), is related to pumpkin and zucchini and other kinds of squash. But what makes this amazing is that when cooked, the flesh falls into strips that emulate, you guessed it, spaghetti! Although in actuality I would say it’s more like a noodle than pasta. But I guess noodle squash doesn’t quite have the same ring. 

I will say that when making these “replacements” I would advise against using it in place of say pasta or noodles, because it’s not exactly the same. Instead celebrate it for what it is. When cooked in a recipe, you get the naturally sweet flavours of squash, with a slight vegetable bit and the soft noodle-like texture that mops up sauce (especially garlic butter sauce) so well.

Spaghetti Squash “Noodles”

This is, in my opinion, the best way to prepare spaghetti squash.

Prep time:

20 minutes

Cook time:

40 minutes

INGREDIENTS
  • 1 spaghetti squash, whole
  • 1 tbsp olive oil
METHOD
  1. Preheat the oven to 200℃ and line a large baking tray with baking paper. 
  2. Place the whole spaghetti squash in the microwave for four minutes. This step is to soften it slightly so you can cut it safely. 
  3. Slice the squash into round disks, about 3-4cm in thickness. 
  4. Scoop the seeds out and discard. 
  5. Place the rounds on the lined baking tray and coat lightly with olive oil. 
  6. Bake in the oven for 35-40 minutes. Leave to cool for 10 minutes before using a fork to shred the strands, and discarding the skin.

Awesome! Yes, this recipe is great. And basically any pasta recipe that you like, you can use this instead. I really love it just with olive oil, lemon, salt and pepper – and to make it a meal, I’d add some greens like spinach, a pinch of chilli flakes and maybe a can of tuna to add protein.
