Salmon Brunch Plate With Shallot & Coriander

Despite my love for cooking, I still have to search Google to determine what a shallot is. The onion family can be extremely confusing.

However, now that I’ve confirmed its identity, I absolutely love shallots. I never use raw brown or red onion, but raw shallot is just beautiful. It’s soft, sweet, delicate, and oozing with flavor.

My style of cooking is often more assembly than actual cooking, and this recipe is the perfect example of that. It’s a combination of things on a plate with a homemade herby dressing that is to die for.

If you’ve never tried brunch plates, you should. It’s a fusion of a platter and bruschetta, kind of like a self-serve toast breakfast station. I don’t know why, but it works, and it’s an easy way to make it look like you did something really special without putting much time or effort into cooking. If you can chop vegetables and make toast, you can create this delicious brunch plate for two.

INGREDIENTS
  • 1 yellow zucchini, ribboned
  • 1 avocado, sliced
  • 200g hot smoked salmon
  • 1 cucumber, sliced
  • Bread of choice, to serve
Herb Salsa
  • 2 tsp capers
  • ½ shallot, finely sliced
  • ½ cup fresh coriander
  • 3 tbsp extra virgin olive oil
  • ½ lemon, zest and juice
METHOD
  1. First, make the herb salsa. In a small bowl, combine capers, shallot, coriander, extra virgin olive oil, and lemon zest and juice. Set aside. 
  2. Place zucchini ribbons, sliced avocado, hot smoked salmon, and sliced cucumber on a plate.
  3. Spoon the herb salsa over the top of the ingredients on the plate.
  4. Serve with toasted bread of choice.
