Cool As A Cucumber Smoothie

A little (low sugar) daily health insurance with my Cool As A Cucumber Smoothie, which I enjoy in the afternoon instead of the morning, even though it makes a great breakfast too – I’m just weird like that. It’s a great chance for me to add an extra boost of powerful nutrients to my day. 

I love the addition of raw zucchini and cucumber in this smoothie, and along with the avocado and yoghurt this smoothie has a really nice cooling effect. I use Melrose Organic Essential Greens for an extra boost or superfoods too. 

I normally like to use a protein powder in my smoothie, but with the Greek yoghurt and chia seeds, this smoothie has enough protein to make the perfect snack, especially if my other meals have been high in protein. This recipe also works beautifully with coconut yoghurt for a dairy-free and paleo alternative. 

You may need to adjust the quantity of water or milk depending on your blender and how thick or runny you like your smoothies.

I like to keep my smoothies and recipes low in sugar, even natural sugar. Most of the time, for a smoothie I stick to half a banana, or maybe a whole if it is a very small banana. 

If you are using a large avocado, go for a quarter instead of a half to prevent it from tasting too strong.

INGREDIENTS
  • ½ medium zucchini, raw 
  • ½ cucumber, raw
  • ½ small avocado
  • 1 tsp Melrose Organic Essential Greens 
  • ½ medium banana 
  • ¼ cup Greek yoghurt
  • ½ cup water or almond milk 
  • 2 tsp chia seeds 
METHOD
  1. Place all ingredients in a blender and blend.
 
Notes
  • Dairy free option: Replace Greek yoghurt with coconut yoghurt. 
  • You may need to adjust the quantity of water or milk depending on your blender and how thick or runny you like your smoothies. 
  • If you are using a large avocado, use a quarter instead of a half.
