By now you know I’m not a fan of sugar, and I have a strained relationship with common “healthy” sweeteners like maple syrup, dates, honey and brown rice syrup.

Not because they are evil, but because they don’t help you get on top of sugar cravings. Simply because they are still sugar, and they still give us that brain reward feeling that can lead us to want more, more, more.

So I of course prefer to keep all of my food, especially every day food like snack balls, without the use of any kind of sugar, natural or not.

That said, I still want my food to be tasty and satisfying. And in the case of this snack ball, I want it to have all the nutritional properties so it succeeds at its only job, which is to keep you satisfied and energised until your next meal. This means protein, fat and fibre!

Chocolate Hazelnut Crunch Protein Balls

I still want my food to be tasty and satisfying. And in the case of this snack ball, I want it to have all the nutritional properties so it succeeds at its only job, which is to keep you satisfied and energised until your next meal.

INGREDIENTS
  • ½ cup vanilla protein
  • ¼ cup desiccated coconut 
  • ¼ cup hemp seeds 
  • 1 tbsp coconut flour
  • 1½  tbsp cacao powder
  • ½ tsp pure monk fruit powder (optional for sweetness)
  • ¼ cup hazelnut butter
  • 2 tbsp coconut oil, melted
  • ¼ tsp flakey salt 
  • ½ cup roasted hazelnuts*, roughly chopped
METHOD
  1. In a large bowl combine the protein, desiccated coconut, hemp seeds, coconut flour and cacao powder until no lumps remain.
  2. Stir in the hazelnut butter and coconut oil, and combine using your hands to form a dough. Throw in the salt and hazelnuts and combine.
  3. Roll into 6 balls and place in the fridge to set. Store in a jar in the fridge.
 
Notes
  • Pure monk fruit powder is a sugar-free sweetener (read more about what monk fruit is and where to get it here), not to be confused with “monk fruit sweetener” which is actually an erythritol based sweetener. 
  • This recipe relies on the crunch of the hazelnuts being roasted! If you can’t buy roasted hazelnuts, simply place raw hazelnuts on a baking tray and bake in a preheated oven (180°C) for 10 or so minutes.
  • This recipe will vary slightly depending on what protein you use, as all are slightly different. If your mixture is a too soft and wet to shape into balls, add an extra tbsp of coconut flour. And if it’s not sweet enough, you can add your sweetener of choice. To keep is sugar-free, I recommend 10 drops of liquid stevia or 1/2 tsp pure monk fruit powder.
  • This recipe works with any nut butter. Please note, the use of peanut butter will mean this recipe is no longer paleo or legume free.
