I totally believe that physical and mental health starts in the gut, and the best way to look after it is using food as medicine. Sesame Salmon + Kimchi Kale Salad

INGREDIENTS
  • 2 fillets salmon
  • 1 tbsp tamari
  • 1 tsp toasted sesame oil
  • ½ bunch Tuscan kale
  • 1 tbsp apple cider vinegar
  • 1 tbsp olive oil
  • ¼ cup kimchi
  • 1 tbsp hemp seeds
  • Sea salt and black pepper
METHOD
  1. Preheat the oven to 120℃.
  2. In a small bowl, combine the tamari and sesame oil. Place the salmon in a roasting dish and pour over the tamari mixture, ensuring each side is well coated.
  3. Place in the oven for 30 minutes.
  4. Meanwhile, prepare the salad by placing the kale in a bowl with a generous pinch of salt, apple cider vinegar and olive oil. Using your hands, massage the kale until broken down and wilted. Toss through the kimchi and sprinkle over hemp seeds.
  5. Serve the salmon and salad with some fresh coriander and enjoy!
