Salmon Rice Paper Rolls & Spicy Tahini Sauce

There is just something so special about rice paper rolls, despite being mostly containing simple raw vegetables and rice paper. You wrap it all up and add a very tasty dipping sauce and you have this delicious chewy roll dripping in sauce and bursting with fresh flavours. Not to mention they are so light, and they leave you feeling that way too – fresh and vibrant. 

This is a very simple recipe, using hot smoked salmon which makes this dish perfect for a light meal or an appetiser. I love to make a batch of these and split them with my partner for a fun and interactive weekday lunch. 

There is an art to rolling these, but all you need is practice. The more you do it, the better and tighter they become. 

What to put inside rice paper rolls

There are endless options for what you can put in rice paper rolls. Almost all kinds of vegetables, raw and cooked with proteins like tofu, salmon, prawns and even chicken and beef. I’m excited to explore some more options, and I’ve got roasted eggplant in mind for my next creation.

How to make rice paper rolls

There are a few different ways to roll them and you could scour the internet looking at all the different ways. I’ve provided a simple method here which I feel is most intuitive, but feel free to have a play around until you find something that works for you. 

Expect to have some wonky and broken ones, this is totally normal.

Tips for making rice paper rolls

  • Set up all of your filling ingredients ready to go. This is fundamental to the process. As rice paper is sticky and you need to work relatively quickly, you don’t want anything holding you up. 
  • Roll them as tight as you can, without breaking the paper. You want the filling to be neatly within. 
  • After rolling, place them on a plate or tray lined with baking paper. This will prevent them from sticking to the plate and potentially breaking.  
  • You can double up the rice paper to increase the thickness and integrity of the roll. Simply use two on top of each other instead of one. They go in the water together and are used as per the instructions for one.

INGREDIENTS
  • 8 rice paper rounds
  • 200g hot smoked salmon
  • 1 cucumber, finely sliced 
  • 1 cups shredded cabbage 
  • ¼ cup bean sprouts 
  • 4 spring onions, chopped
 
Spicy Tahini Sauce 
  • ½ cup hulled tahini 
  • 1 lemon, juiced 
  • 2 tbsp hot sauce, or to taste 
  • 2 tbsp tamari 
  • 2 tbsp rice vinegar 
  • ½ tsp ginger, ground
  • 60ml water
METHOD
  1. Set up a station with all of your fillings ready, and fill a plate that is larger than the rice paper round with warm water. You’ll need a plate with a slightly lipped edge but only about ½ cm of water is needed. 
  2. Slide the rice paper round, smooth side down, into the plate and submerge it in the water. Leave it submerged for 5-8 seconds, until soft and malleable, then pull it out and carefully place on a chopping board or smooth surface. 
  3. Place all of your fillings in the shape of a small rectangle in the centre of the round, then carefully roll them up. Pull one side completely over the other, enclosing the filling and ensuring it is tightly enclosed. Pull in the other sides, then continue to roll it over itself until it is a neat(ish) package. Continue until you have run out of filling.  
  4. To make the dipping sauce, combine all ingredients in a small bowl and stir to combine. 
  5. Serve your rice paper rolls with dipping sauce.
 
Notes

  • There are plenty of options for fillings inside rice paper rolls. Feel free to use whatever vegetables you have on hand. Here is a recipe for a vegetarian option made from tofu.
