Barely a week goes by where I don’t enjoy some kind of salmon so as you can imagine I’ve developed many different ways of having it, because I always like to keep things interesting yet simple. 

Although I love grilling salmon to get that crispy skin we all know and love, baking salmon in the oven is just so easy and fuss-free that it’s hard to top. You can stick this one in the oven and put together your sides and salads, clean dishes, and by the time it’s ready you’ve got a beautiful dinner or lunch spread served. 

If you’ve never used a side of salmon before, it’s a great option for cooking for families or intimate dinner parties, as you really get that centre of the table item that looks perfect just out of the oven. I just transfer the foil straight from the try to the board and add lemon wedges and voila!

Rosemary & Thyme Topped Salmon Side

An easy and healthy baked salmon dinner recipe to go with some delicious salads and sides.

INGREDIENTS
  • 1 side of salmon (approx. 750-850g)  
  • 3 tbsp olive oil 
  • 4 cloves garlic, crushed 
  • 2 tbsp rosemary leaves, picked 
  • 1 tbsp thyme leaves, picked 
  • ½ lemon, zested and juiced 
  • Sea salt and black pepper, to taste
METHOD
  1. Preheat the oven to 200°C and line a large baking tray with foil. This foil will later be used to wrap the salmon. 
  2. In a small bowl, combine the olive oil, garlic, rosemary, thyme, lemon zest, lemon juice, salt and pepper. 
  3. Place the salmon side in a large bowl and pour over the olive oil mixture, coating all sides of the salmon generously. Place the salmon on the lined tray, pouring over any remaining marinade.  
  4. Wrap the salmon in the foil, forming a parcel, ensuring the top is covered. Use extra foil if needed. 
  5. Place in the oven and bake for 18 minutes. Then remove from the oven, unwrap the parcel exposing the whole top side of the salmon, and place back in the oven on a top shelf on the grill setting. Cook for a further 4-5 minutes, watching carefully to prevent burning. Serve with extra lemon slices. 
 
Notes
  • The exact cooking times will vary depending on the size and thickness of your salmon.
