Mint-Essential Greens Bites

Afternoon tea gets a wellness makeover with my Mint-Essential Greens Bites. This coconutty recipe features Melrose Health’s Essential Greens powder which contains a stellar combo of wheatgrass, barley grass, spirulina and chlorella.

When it comes to choosing healthy snacks, it’s one thing to take out the sugar, and the second step is to add in nourishing ingredients. In this one I’ve used greens and mint, for a solid dose of antioxidants and a soothing effect on digestion. Pair with a cup of herbal tea (more plant magic), and you’ve got yourself a perfect afternoon moment to give you a little pep in your step – a much better option than reaching for a second or third coffee.

Mint-Essential Greens Bites

INGREDIENTS
  • 1½ cups desiccated coconut
  • ½ cup almond flour
  • 2 tbsp Melrose Health Essential Greens Powder
  • 2 tbsp erythritol based sweetener*
  • 4 drops peppermint essential oil
  • ¼  cup coconut butter, melted
METHOD
  1. Place coconut, almond flour, greens and erythritol in a large bowl and combine.
  2. In a smaller bowl, stir the peppermint oil into the melted coconut butter.
  3. Add this to the dry ingredients, along with ¼ cup (60 ml) water and combine using your hands.
  4. Shape into approximately 10 balls. The mixture is crumbly so rolling might cause it to break. Use your hands to shape the balls instead. Store in the fridge in an airtight container.
 
Notes
  • May be erythritol or Lakanto.
  • Erythritol is a sugar alcohol that forms the base of many granular “sugar free sweeteners”. Read more about what erythritol is here, including my product recommendations. The use of erythritol in this recipe is what makes it low-carb and/or keto friendly. If this is not a worry for you, the best substitution is coconut sugar which can be used in the same quantity. Please know that the use of coconut sugar takes away the sugar-free status of this recipe and may alter the colour of the finished product. Read more about sugar and my philosophy here.
