Mint Choc Chip Green Smoothie
In Summer, I often replace my lunch with a smoothie, because that’s often what I crave at the time, but I still like it to have all the protein, fat, fibre, greens and goodness of my normal lunch meal. I have been loving this recipe lately. It’s fruit-free, making it low in sugar, and contains avocado which makes it deliciously creamy. I also always make sure to add a source of protein to my smoothies as it really keeps me full (this is one of the biggest smoothie mistakes I see!).

INGREDIENTS
- 1 zucchini, chopped
- ½ avocado
- 1 cup (250ml) coconut water
- 5-6 fresh mint leaves
- 2 tbsp canned coconut cream
- 1 tsp Melrose Organic Essential Greens Powder
- 1 scoop vanilla protein
- 1 tbsp cacao nibs, to serve
- 1 tbsp shredded coconut, to serve
METHOD
- Place the zucchini, avo, coconut water, mint, coconut cream, greens and protein in a blender and blend until smooth.
- Top with cacao nibs and coconut.
