After being vegetarian (and even vegan at one stage) for years, after delving in to the research on diet and mental health, it was clear to me that red meat wasn’t quite the evil I was once told it was.

While you see I post a lot of fish recipes and vego recipes, I can’t deny that occasional red meat is an important part of my diet. After being vegetarian (and even vegan at one stage) for years, after delving in to the research on diet and mental health, it was clear to me that red meat wasn’t quite the evil I was once told it was.

That is of course predicated on the quality and amount you eat, for which I am extremely picky, and if I don’t trust the quality of the meat I am eating, I don’t eat it and will go for the veggie option.

I’ve found some very good quality sources of animal products local to me, and these are all foods I am happy to consume.

And having gone from eating zero red meat for years, to now eating it a few times a month, I can vouch for the benefits from a personal experience that’s for sure – I’ve noticed huge changes in my mental health, energy, mood and overall vitality – and I’m talking really huge changes.

Anyway, this is a delicious Greek inspired lamb recipe to enjoy! It’s a recipe directly from my Low Carb Starter Kit. This kit contains everything you need to start a low carb diet, and eat delicious food like these lamb koftas!

INGREDIENTS
  • 1 head cauliflower, chopped
  • 1 red capsicum, sliced
  • 2 zucchinis, sliced into chunks
  • ½ red onion, sliced
  • ½ tsp cumin
  • ¼ tsp paprika
  • 1 tbsp olive oil
  • Salt and black pepper, to taste
Tzatziki
  • 1 cup full-fat Greek yoghurt
  • 2 cucumbers
  • 1 tbsp extra virgin olive oil (garlic infused if possible)
  • 1 clove garlic, crushed
  • ¼ bunch fresh mint, finely chopped
  • ½ lemon, zested and juiced
Koftas
  • 500g lamb mince
  • ½ red onion, chopped finely
  • 1 clove garlic
  • ¼ tsp chilli flakes
  • 1 tbsp chopped mint
  • 1 tbsp fresh parsley
  • 1 tsp paprika
  • ¼ tsp ground ginger
  • 1 tsp cumin
  • ½ tsp ground coriander
  • ½ tsp salt
  • 2 tbsp olive oil, for frying
METHOD
  1. Preheat the oven to 200°C.
  2. Place cauliflower, capsicum, zucchini and onion on a large tray.
  3. Sprinkle over cumin, paprika, salt and pepper and coat in olive oil.
  4. Place in the oven to bake for 35-40 minutes, until soft and browned on the edges.
  5. Meanwhile prepare the koftas by placing all ingredients excluding the oil in a large bowl and mixing with your hands.
  6. Shape into long thick sausages and place on a tray in the fridge for 15-20 minutes.
  7. Prepare the tzatziki by combining all ingredients in a small bowl. Set aside for serving.
  8. Heat a large pan to a medium-high heat and add olive oil.
  9. When hot place koftas into the pan and cook for 10 minutes, turning every few minutes to ensure they don't burn. Place on a plate to rest for 5 minutes.
  10. Serve koftas with roasted veggies and tzatziki!
