Hidden Gem Blueberry Chocolate Bites

I first saw a version of these online. When I saw an easy treat that ticked a few of my boxes – sugar-free, minimal ingredients and using two of my daily staples – I had to make a version! I don’t know why I never thought of combining fresh fruit with chocolate, since I do it with dried fruit and nuts all the time!

This easy-to-make recipe combines the sweet and tart flavors of fresh blueberries with the rich and decadent taste of dark chocolate.

Blueberries are my favourite fruit, and always have been! And yes it’s a great bonus that they are one of the few fruit options that is comparatively very low in sugar.

When it comes to dark chocolate, choosing a bar with 85% or higher cacao percentage makes it so low in sugar that I consider it sugar-free, despite the presence of sugar in the ingredients list (which can be confusing, I know).

Hidden Gem Blueberry Chocolate Bites

An easy no-bake and low-sugar treat with fresh blueberries and rich dark chocolate.

INGREDIENTS
  • 100g dark chocolate (85-90%)
  • 1 ½ cups fresh blueberries
  • 1 tbsp cacao nibs
METHOD
  1. Melt the dark chocolate in a heatproof bowl set over a pot of simmering water, stirring occasionally. Or melt in the microwave in 30 second increments, stirring between each.
  2. Line a baking sheet with parchment paper.
  3. Add the blueberries to the melted chocolate and quickly fold until they are completely coated. The chocolate will start to harden.
  4. Scoop small clusters of blueberries onto the prepared baking sheet.
  5. Sprinkle the cacao nibs over the clusters.
  6. Place in the fridge to set.
 
Notes
  • These clusters can be stored in an airtight container in the refrigerator for three days.
