Christmas Jewel Bark

If ever there is a time to enjoy childhood sweets as an adult, it's Christmas. Although this Christmas Jewel Bark has a slightly more mature taste then your standard colourful candy.

Studded with chewy, sweet and sour fruits, this creamy white chocolate bark is the perfect thing to snack on as you sit by the fire (or the air-con if you enjoy Christmas in the Southern Hemisphere like myself).

Christmas Jewel Bark

Who doesn’t love a fun festive recipe to snack on through the holiday period. This Christmas Jewel Bark is just that. The creamy white chocolate base, topped with sweet and sour fruits and crunchy nuts is the perfect textured festive treat.

I make my own white chocolate with a combination of coconut butter and cacao butter, but if you are short on time or ingredients, you can easily make this with store bought white chocolate, if you can find a wholesome or sugar-free version. It can also be made with regular white chocolate!

INGREDIENTS
  • ½ cup coconut butter
  • 50g cacao butter
  • 1 vanilla pod, split and seeds scraped
  • 20 drops liquid stevia
  • 2 tbsp goji berries
  • 2 tbsp pistachios, chopped
  • 1 tbsp dried inca berries, chopped
METHOD
  1. Melt the coconut butter and cacao butter in a bowl sitting over a pot of gently simmering water. 
  2. Remove from the heat and stir in the stevia and vanilla. Leave to cool slightly for 10 minutes. 
  3. Line a brownie tin with baking paper and pour in the mixture. 
  4. Sprinkle over the goji berries, pistachios and inca berries and place in the fridge or freezer to set for about 1 hour.
  5. Remove from the fridge and use a large knife to cut into shards.
 
Notes 
  • Any nuts or dried fruit would work in this recipe.
  • If you don't want to make your own chocolate, you can use store bought (I love Well Naturally and Loving Earth).
  • You can also use dark chocolate!
