This is a beautifully simple salad that I love to serve for lunch for two. The tamari in the dressing adds a depth of umami flavour that takes these lettuces to a new level or moreish!

INGREDIENTS
- 1 head cos lettuce, roughly torn
- 1 head radicchio, roughly torn
- 1 cucumber, peeled and sliced
- 2 spring onions, chopped
- 3 tbsp sesame seeds
- 1 avocado, sliced
- 100g smoked salmon
Dressing
- 3 tbsp olive oil
- 1 tbsp apple cider vinegar
- 1 tbsp rice wine vinegar
- 2 tbsp tamari
METHOD
- Prepare the dressing by combining all the ingredients in a small bowl or jar. Set aside.
- In a large bowl add the lettuce, radicchio, cucumber, spring onion and sesame seeds. Pour over the dressing and toss to combine. Place in a serving dish.
- Top salad with avocado and salmon. And sprinkle with extra sesame seeds to serve.
