INGREDIENTS
  • 1 head cos lettuce, roughly torn 
  • 1 head radicchio, roughly torn  
  • 1 cucumber, peeled and sliced 
  • 2 spring onions, chopped 
  • 3 tbsp sesame seeds
  • 1 avocado, sliced 
  • 100g smoked salmon
Dressing 
  • 3 tbsp olive oil 
  • 1 tbsp apple cider vinegar
  • 1 tbsp rice wine vinegar
  • 2 tbsp tamari
METHOD
  1. Prepare the dressing by combining all the ingredients in a small bowl or jar. Set aside. 
  2. In a large bowl add the lettuce, radicchio, cucumber, spring onion and sesame seeds. Pour over the dressing and toss to combine. Place in a serving dish. 
  3. Top salad with avocado and salmon. And sprinkle with extra sesame seeds to serve.
