A favourite plant based appetiser in my kitchen, these skewers certainly redefine what a plant-based starter is normally thought to be! A crispy skewer and a moreish dipping sauce that you won’t be able to get enough of.

A favourite plant based appetiser in my kitchen, these skewers certainly redefine what a plant-based starter is normally thought to be! A crispy skewer and a moreish dipping sauce that you won’t be able to get enough of! These are also great on the BBQ.

Crispy Tofu Skewers & Satay Dipping Sauce

A crispy skewer and a moreish dipping sauce that you won’t be able to get enough of!

INGREDIENTS
  • 600g block tofu
  • ¼ cup tamari 
  • 3 tbsp coconut oil OR ghee 
  • 1 cucumber, sliced 
  • ¼ cup mint, roughly chopped
  • 1 tbsp sesame seeds
Satay Dipping Sauce 
  • 3 tbsp peanut butter 
  • 1 clove garlic, crushed 
  • 2 tbsp tamari 
  • ½ lime, juiced 
  • 1 tsp sesame oil 
  • 1 tbsp honey OR maple syrup 
METHOD
  1. Slice the tofu into long rectangles, about 2cm thick. Carefully skewer these onto skewers, pushing them all the way up but stopping just before it breaks through. 
  2. Place skewers into a tray and pour over tamari to marinate for at least 15 minutes. 
  3. Meanwhile, prepare the sauce by combining all ingredients in a small bowl, along with 1 tbsp (10ml) of water and set aside. 
  4. To cook the tofu, carefully place the coconut oil or ghee in a large pan on a high heat. You want to bring the oil up to a high temperature. You can test this by splashing a drop of water into the pan. You want to hear a sizzle. 
  5. Carefully, using tongs, place the tofu skewers in the pan and cook on each side for about 5 minutes until nice and crispy. Pour over any remaining tamari. 
  6. Serve with cucumber, chopped mint, sesame seeds and satay dipping sauce.
