Flaxseeds are a powerful plant based source of omega-3’s, however whole flax seeds can be difficult to digest. And in fact can often pass through the digestive system untouched. Flaxseed oil is a great bioavailable way to take advantage of the anti-inflammatory properties of this seed, and it’s natural nutty flavour makes it a delicious base for salad dressings.

INGREDIENTS
  • 2 cups sugar snap peas, trimmed and slices 
  • 1 head radicchio, leaves torn 
  • 2 avocados, sliced 
  • 100g feta, crumbled 
  • ¼ cup sesame seeds, toasted 
  • ¼ cup golden raisins 
Flaxseed Vinaigrette 
  • 1 tbsp olive oil 
  • 3 tbsp Melrose Flaxseed Oil 
  • 1 lemon, juiced 
  • 2 tsp Dijon mustard 
  • 1 tsp basil, dried 
  • Salt and pepper, to taste
METHOD
  1. Prepare the dressing by combining all ingredients in a small bowl or jar. 
  2. Place the snap peas and radicchio in a large bowl and pour in half the dressing, toss to coat and serve on a large plate. 
  3. Top with avocado, feta, sesame seeds and raisins. Spoon over remaining dressing.
