Seed Bircher & Berry Compote
This recipe makes a delicious breakfast pudding for any of you who are looking for a low carb alternative to oats, especially in the warmer months! Make it the night before and enjoy in the morning.
Seed Bircher & Berry Compote

INGREDIENTS
- 2 tbsp ground flaxseeds
- 1 tbsp chia seeds
- 1 tbsp coconut flour
- 1 tbsp desiccated coconut
- 2 tbsp vanilla protein powder
- 1 tbsp almond meal
- 1 tbsp hemp seeds
- 1 cup (250ml) almond milk
- 1 tsp cinnamon
Mixed Berry Compote
- 4 cups fresh or frozen berries
- ½ lemon, juiced
Toppings
- 1 tbsp almond butter
- ½ cup fresh fruit of choice
- Coconut yoghurt, to serve
METHOD
- Heat a saucepan over medium heat. Add in the frozen berries and lemon juice. Allow to cook, stirring occasionally for 15 minutes, until they become sticky. Remove from the heat and set aside. You can blend in a heat safe blender or leave it chunky.
- Prepare the pudding by combining all ingredients in a jar. Ensure everything is incorporated and there are no lumps of seeds. Place in the fridge for two hours or overnight.
- In the morning serve with a dollop of berry compote and toppings of choice.
