Miso Hemp Salmon Noodles
A delicious lunch dish that gives you a solid dose of healthy fats, specifically the essential omega-3s and omega-6s, which we must consume through diet or supplementation, since the body cannot manufacture these on its own.
In this recipe, you’ll get omega 6’s from the almond butter, sesame seeds and sesame oil. And there is a variety of both plant based omega-3’s in the flaxseed oil and animal-based omega-3’s from the salmon.

INGREDIENTS
- 2 zucchinis, spiralised
- 400g hot smoked salmon
- 2 tbsp almonds or cashews, chopped
- 1 tbsp sesame seeds
- Salt and pepper to taste
Hemp Coriander Dressing
- 2 cloves garlic, finely sliced or crushed
- ½ bunch coriander, stems and leaves
- ½ bunch basil, fresh
- 1 spring onion, finely chopped
- 1 tsp sesame oil
- 3 tbsp almond butter
- 1 tbsp tamari
- 1 tbsp miso paste
- ¼ cup hemp seed oil
- ½ lemon, juiced
METHOD
- Prepare the dressing by placing all ingredients in a blender or food processor and blend until combined.
- To prepare the salad, place the zucchini in a large bowl and add three tablespoons of the prepared dressing and toss to combine. Serve the salad topped with flaked salmon, nuts and sesame seeds.

- This recipe works with any nut butter.
