Blueberry Cream Kickstart Smoothie
After years of eating low sugar and low carb (most of the time), I feel like I’ve nailed the low sugar smoothie. And while there is nothing wrong with higher sugar fruits like mango and banana, I prefer to keep my breakfasts or first meals to be very low in carbohydrates and sugar as this leaves me feeling the most energized and productive for the rest of the day.
And that’s why I mainly use berries in my smoothie, and sometimes no fruit at all. In this particular recipe, I’ve added some MCT Oil which is one of my favourite additions to a low carb lifestyle. If I’m not having it in my coffee or on eggs, I add it to a smoothie. But you can also use this recipe without the MCT Oil too.
This is a hearty smoothie that is high in fat (in a good way) and a great breakfast, especially if you are managing your insulin or feel better with a lower carb way of eating. Enjoy!
Blueberry Cream Kickstart Smoothie
A dreamy creamy smoothie for a low-carb and energising breakfast to kick start your day.

INGREDIENTS
- ½ avocado
- ⅓ cup blueberries, frozen
- 1 tbsp almond butter, plus extra to serve
- 1 tbsp Melrose MCT Oil
- 2 tbsp vanilla protein powder
- 250ml almond milk
- ¼ cup coconut yoghurt, to serve (optional)
METHOD
- Place the avocado, blueberries, almond butter, MCT Oil, protein and almond milk in a blender. Blend until smooth, adding more liquid if necessary to achieve the desired thickness.
- Serve with coconut yoghurt and an extra drizzle of almond butter.
Notes
- You can omit the MCT Oil if desired.
- You can use any milk of choice for this recipe. You can also use water in place of milk.
