INGREDIENTS
- 1 bunch broccolini, steamed trimmed
- 1 cup sugar snap peas, ends trimmed
- 1 tbsp sesame seeds
Sauce
- ½ cup peanut butter, natural
- 2 tbsp tamari
- 1 clove garlic, crushed
- 2 tsp sesame oil
- 2 tbsp fish sauce OR vegan alternative
- ½ lime, juiced
METHOD
- Prepare the sauce by combining all ingredients in a small bowl with ¼ cup (60ml) water. It may seem like it’s not coming together, but keep stirring and it will become creamy. Alternatively you can add all ingredients into a blender or food processor.
- Heat a small amount of water in a pot with a steamer basket and lid. Bring to the boil then reduce the heat slightly. Add the broccolini and snow peas to the steamer and place the lid on, steam for about 4-5 minutes. You want the veggies to still be bright green. Remove from the heat.
- Spread the sauce onto a plate, you may have some leftovers. Place the steamed greens on the plate and top with sesame seeds.
Notes
- Vegan option: Use a vegan “fish sauce”. I use this one from Niulife.
- This recipe works with any nut butter.
