Now of course in between that I like to have something small (I call it a mini meal) in the afternoon in between my two main meals (which both follow this formula).

Berry Beauty Bliss Balls

I absolutely love this recipe! It tastes like a creamy vanilla cookie dough with bursts of sweet and sour goji berries. Yum!

And some form of protein ball is what I like to keep in the fridge for these times.

The thing with store-bought protein balls is that they are filled with so much sugar!! And this only leaves you hungry, craving more sugar and not feeling energised. No thanks.

So of course I like to make my own!

INGREDIENTS
  • ¼ cup vanilla pea protein powder
  • 3 tbsp Pearl Marine Collagen (unflavoured or creamer)
  • 2 tbsp coconut flour
  • ¼ cup desiccated coconut, plus extra for rolling
  • ¼ cup hemp seeds
  • ¼ cup cashew butter
  • 2 tbsp coconut oil, melted
  • ¼ cup goji berries, dried
METHOD
  1. In a large bowl combine the protein powder, collagen, coconut flour, desiccated coconut and hemp seeds. Stir until no lumps remain. 
  2. Add in the cashew butter and coconut oil and combine to form a sticky dough. If the mixture is too soft, simply add an extra tablespoon of coconut flour. Stir in the goji berries. 
  3. Shape into 6 balls and place in the fridge or freezer for 30 minutes to set. 
  4. Roll in extra coconut and enjoy! Store in the fridge in a jar or container.
