I recently made this for some friends and they raves about it so much, I just had to share the recipe with you! These juicy almond satay chicken skewers are so yum!
You can serve with any greens here to make a complete meal. Some fried cauliflower rice would be good too.
Juicy Turmeric Almond Satay Chicken Skewers
I recently made this for some friends and they raves about it so much, I just had to share the recipe with you! These juicy almond satay chicken skewers are so yum!

INGREDIENTS
- 1 bunch broccolini, sliced lengthways
- ½ cup alfalfa sprouts
- Salt and pepper to taste
Chicken skewers
- 300g pasture raised chicken thighs, sliced lengthways
- 2 tbsp almond butter
- ¼ cup coconut milk, canned
- 2 tbsp coconut aminos
- 1 tsp ginger, ground
- 1 tsp turmeric, ground
- ¼ tsp chilli (optional)
- 1 lime, juiced
- ½ tsp salt
- Black pepper to taste
METHOD
- In a large bowl combine the almond butter, coconut milk, coconut aminos, ginger, turmeric, salt, pepper and chilli (if using). Add in the chicken and coat in the marinade.
- Heat a large skillet over medium-high heat. Skewer the chicken onto skewers. Place each in the skillet and pour over any remaining marinade. Grill on each side for about 7 minutes or until the chicken is cooked through. Remove chicken from the pan and serve.
- Place broccolini in the pan and cook for 5 minutes. Serve with the chicken and sprouts.
Notes
- Vegan option: Replace the chicken with tofu.
- This recipe works with any nut butter.
