This road is not rocky, but it is jelly! In this interesting dessert, I’ve used Belly Blends Gummy mixes to prepare the jelly portion of the recipe. I’m a huge fan of gelatin for sleep, beauty, gut health and inflammation and taste! I’ve also added in Inca berries and gojis because even though everything I do is very low in sugar, you can’t have Christmas without it’s signature dried fruit flavours. Of course I’ve picked the options low in sugar to make this dessert something decadent we can enjoy without the sugar hangover.

INGREDIENTS
  • 1 packet Superberry Belly Blends
  • ½ cup coconut butter
  • ¼ cup butter OR coconut oil
  • ¾ cup cacao butter
  • 1 vanilla bean, seeds scraped
  • 20 drops liquid stevia OR to taste
  • 1 cup macadamias, roasted
  • ⅓ cup dried inca berries
  • ¼ cup dried goji berries
  • 20 drops liquid stevia, or to taste
  • 1 cup macadamias, roasted
  • ⅓ cup dried inca berries
  • ¼ cup dried goji berries
METHOD
  1. Prepare the Belly Blends according to packet instructions and pour into a medium sized container. When ready, chop into small squared. 
  2. Melt the coconut butter, cacao butter and butter or oil together in a double boiler or in the microwave in 30 second increments. Add stevia and vanilla and stir to combine. 
  3. Line a loaf tin with baking paper and scatter in half the Belly Blends squares, the nuts, inca berries and gojis. Pour over half the white chocolate mixture to cover. Repeat with the remaining fillings and chocolate mixture, reserving a few for topping. 
  4. Place in the fridge to set. Slice and serve.
 
Notes
  • Dairy free option: Omit the butter and opt for the coconut oil instead.
