White Chocolate Fat Fudge
I uploaded the below photo on Instagram the other day and EVERYONE wanted the recipe so here it is! Turns out white chocolate is a popular treat, especially for those avoiding sugar.
Serves:
12
Prep time:
35 minutes
Cook time:
10 minutes
INGREDIENTS
- ¼ cup coconut butter
- ¼ cup cashew butter
- 2 tbsp coconut oil
- 2 tbsp cacao butter
- ¼ teaspoon vanilla powder or ½ tsp vanilla extract
- 10–12 drops liquid stevia, or to taste
METHOD
- In a small saucepan over a very low heat, melt the coconut butter, cashew butter, cacao butter and coconut oil. Remove from the heat and stir in the vanilla and stevia.
- Pour into a small lined tray, a loaf tin lined with baking paper is perfect, or silicone mould and place in the freezer for 30-60 minutes. Slice into 12 squares. Store in the fridge for a softer consistency or the freezer for a harder consistency.
Notes
- Any nut butter works with this recipe.
- No stevia? You can replace it with 2 tablespoons of liquid sweetener such as honey or maple syrup. Please know this will increase the sugar content slightly. Read my guide to sweeteners here.
