3-Ingredient Toasted Coconut Clusters
Toasted coconut is life… and so is chocolate. Hence this recipe haha! I whipped this one up because I needed something quick and easy and tasty to take to an event. These clusters are vegan and keto friendly and remind me of chocolate crackles! I added in hemp seeds to this one for a little something different!

INGREDIENTS
- 2 cups coconut flakes
- ½ cup hemp seeds
- 100g dark chocolate (85-90%)
METHOD
- Preheat the oven to 180℃ and spread coconut onto a tray. Toast on the oven for 5–10 minutes. Watch carefully as it burns easily! Give the coconut a shuffle about half way through.
- Melt chocolate in a double boiler (a bowl of water placed on top of gently simmering water).
- Remove from the heat and stir in the toasted coconut flakes and hemp seeds. Spoon into moulds (I use silicone but you can use a regular muffin tin lined with muffin cases too.) Set in the fridge or freezer and store in the fridge.
Notes
- Dairy free/Vegan Option: Use dairy free/vegan chocolate.
- I don't use any sweetener in this recipe as I like it just the way it is. You can always add a couple drops of liquid stevia here if you wish, but I generally only ever use sweeteners if absolutely necessary. Most of the time, I love the flavours of chocolate and coconut on their own, they are rich and flavourful enough!
