I go through serious phases with my cooking, and right now, all I can think about is cookies! You should see the camera roll on my phone, it is just endless photos of cookies.

These ones are an easy throw-together type cookie. While they don’t have the typical butteriness of a baked cookie (they are more like a macaron), they are delicious and simple!

They are also perfect for kids as they are lunchbox-friendly and contain no added sweeteners or sugars – bananas are sweet enough already! The chocolate is totally optional but adds a nice chocolate touch if you are in the mood. They’d also be delicious with some cinnamon in there too!

INGREDIENTS
  • 2 bananas
  • 1½  cups dessicated coconut 
  • 2 tbsp coconut flour 
  • 10 dark chocolate buttons (optional)
METHOD
  1. Preheat the oven to 180°C
  2. In a large bowl, mash the banana as much as possible. Stir in the coconut and coconut flour until a dough forms.
  3. Line a baking tray with baking paper. Shape into 10 or so cookies and place on the tray. Dot with chocolate buttons. Bake for 30 minutes or until edges are nicely golden. Leave to cool completely before removing from the tray. Store in an airtight container. These are fine at room temperature for a day or two, but after that, store in the fridge.
 
Notes
  • Dairy Free/Vegan Option: Omit the chocolate buttons or choose dairy free/vegan chocolate buttons.
