Wild Blueberry + Kakadu Plum Smoothie

The weather is heating up here down under, which means my normal lunch bowls are often replaced for a big smoothie bowl. The good thing is that the way I make my smoothies, they have just as much nutrition as a normal lunch – veggies, fibre, protein and enough energy to keep me satisfied for hours.

While I love to follow a code of eating, something that works for me, it’s so nice to have the freedom to eat smoothies for lunch if I feel like it, and I love knowing that I’m getting all the nutrition I need. Plus after a few hours in the sun, there’s nothing better than a cold, refreshing and creamy smoothie!

Of course these work for anytime of day and are a great breakfast option too.

You may have noticed I’ve got an ingredient here that isn’t exactly a pantry staple, although maybe in the future it will be. Kakadu plum is a small green fruit that appears more like an almond-shaped grape than what you traditionally picture when you think of a plum, grows in the subtropical lands around the Northern Territory and Western Australia.

It’s been found to have the highest concentrations of Vitamin C in the world! And a long with the wild blueberries, this makes this smoothie totally packed with antioxidants to support glowing skin and fighting the signs of ageing! It truely is a wildly beautiful smoothie. Enjoy!

INGREDIENTS
  • ½ avocado 
  • 1 zucchini 
  • ⅓ cup wild blueberries, frozen 
  • 1 tsp Kakadu plum powder
  • 1 tsp marine collagen (optional)
  • 1 scoop vanilla protein 
  • ½ cup (125ml) coconut water 
  • 3 tbsp Greek yoghurt OR coconut yoghurt
METHOD
  1. Place all ingredients in a blender along with ½ cup (125ml) water and blend! Top with desired toppings.
 
Notes
  • Vegan option: Opt for the coconut yoghurt over greek yoghurt.
