A perfect side for any meal, that is alos dairy free and vegan. This vibrant and refreshing salad combines the delicate flavours of butter lettuce and radicchio with the unique tartness of Davidson plum and sweetness of apple in a simple yet delicious dressing.

Vibrant Butter Lettuce & Apple Salad

I often buy seasonal local vegetable boxes from small farms. I avoid supermarkets where possible, particularly for fresh produce.

And this salad came about due to the delish May offering that came inside my box from Sift Produce.

A combination of delicate and vibrant butter lettuces delighted me, as it’s my favourite kind. This week, I learned that both red and speckled varieties are available. And don’t even get me started on the most incredible Crimson Snow apples – the best I’ve ever tasted!

Enjoy this classic with a twist salad with elements of salty, sweet, rich and herbaceous. It will go with almost any meal!

Vibrant Butter Lettuce & Apple Salad

INGREDIENTS
Dressing
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • 1/2 tsp Davidson plum powder
  • Pinch sea salt and black pepper
Salad
  • 1/3 cup macadamias, roasted, roughly chopped
  • 8 cups mixed butter lettuce (regular, speckled, red), roughly torn
  • 1 cup radicchio, roughly torn
  • 1 apple, finely sliced
  • 1 small head fennel (or half a medium), finely sliced
  • A few fennel fronds
METHOD
  1. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, honey, Davidson plum powder, sea salt, and black pepper until well combined. Set aside.
  2. In a large salad bowl, combine the mixed butter lettuce, radicchio, apple, and fennel.
  3. Drizzle the dressing over the salad and toss gently to combine, ensuring all the ingredients are evenly coated.
  4. Serve the salad on a large platter, then top with roasted macadamias and a few fennel fronds.
   
Notes
  • Wash the lettuce thoroughly: Place the torn lettuce leaves in a large bowl of cold water, swish them around gently to remove any dirt or debris, then lift the leaves out and spin them dry in a salad spinner.
  • Davidson plum powder can be found in specialty stores or online here. You can omit this if needed, the recipe will works.
