Snap Pea, Avocado & Sesame
I made this recipe because I had a surplus of perfectly ready, very large avocados. And I wanted a recipe that could serve as a side that really heroes those creamy big green avos. Enter this easy dish that simply involves some crunchy and fresh sugar snap peas, a sesame tamari dressing, a touch of chilli and voila!
This is not a salad, as the avocado to everything else ratio doesn’t quite fit. But it is a nice and interesting way to serve avocados, when you don’t feel like making guacamole. It’s perfect for a Summer lunch or barbeque, enjoy!
Snap Pea, Avocado & Sesame
A simple avocado centric side with a hint of sesame and the fresh crunch of sugar snap peas.

INGREDIENTS
- 2 cups sugar snap peas
- 1 avocado, sliced
- 1 tbsp sesame seeds
- 1 tsp chilli flakes
- ¼ cup parsley
- Salt and pepper to taste
Dressing
- 2 tbsp hemp seed oil
- 2 tbsp rice vinegar
- 2 tsp sesame oil
- 1 tbsp tamari
METHOD
- Prepare the dressing by combining all the ingredients in a small bowl or jar.
- Slice the sugar snap peas lengthways and assemble on a plate. Place avocado quarters over the top. Spoon over dressing, sprinkle over sesame seeds, chilli and parsley. Season with salt and pepper.
Notes
- You can use olive oil in place of hemp seed oil.
