Ribboned Zucchini Toast with Flaxseed and Capers
This is no ordinary toast. I know zucchini is probably not your number one toast topping, until you try this recipe. Trust me, this dressing is so delicious. Since making this recipe I’ve been making this dressing and putting it on everything!
It’s fresh, tasty, delicious and wholesome.
Flaxseed oil is a great source of plant based omega-3 fats, and this zucchini toast is the perfect way to get a nice dose in. Elevating your typical morning toast breakfast, this vegetable rich option is creamy, slightly salty from the capers and flavour packed. This toast is a great nutrient dense way to start your day.
I used tahini dip (because I’m tahini obsessed), but you can use hummus too or anything creamy – smashed avocado would be DELISH as well.
Ribboned Zucchini Toast with Flaxseed and Capers

INGREDIENTS
- 2 tsp capers
- ½ shallot
- ½ cup basil, fresh
- 3 tbsp Melrose Flaxseed Oil
- ½ lemon, zest and juice
- 1 large zucchini, ribboned
- 2 slices gluten-free bread of choice
- ¼ cup tahini dip or hummus
- Salt and pepper, to taste
METHOD
- Finely chop the capers, shallot and basil. Add to a medium bowl with flaxseed oil and lemon zest and juice.
- Add in the zucchini ribbons and toss to coat.
- Serve by spreading tahini on the toast, then pile on the marinated zucchini.
