Asparagus season is here! I can’t be the only one who gets excited about this right!? I love this time of year as asparagus comes back into season and starts to pop up at the markets and on menus. It also means the warmer weather is beginning to come back! I love roasted asparagus but did you know it’s also delicious raw? You get a whole different level of texture and flavour, so if you’re looking to try something new give this a go.

INGREDIENTS
- 1 bunch asparagus, chopped finely lengthways
- 1 punnet cherry tomatoes
- 2 tbsp caper berries, drained
- 1 fresh burrata, drained
- ¼ lemon, juiced
- 3 tbsp extra virgin olive oil
- ¼ cup basil leaves, fresh
- Sea salt and black pepper
METHOD
- Assemble the asparagus, cherry tomatoes, burrata and caper berries on a plate.
- Squeeze over fresh lemon, drizzle generously with olive oil and top with fresh basil, salt and pepper.
