Raspberry Chia Jam

Isn’t amazing what you can do when you just eat real food?

While I love the history of traditional jams, that is to preserve all the fruit when it was in season so you can enjoy it when it isn’t in season, nowadays we don’t need to add exorbitant amounts of sugar to our fruit because it’s sweet enough already!

In this recipe, I boil down the raspberries, this concentrated the natural sugars that are in raspberries, and honestly there is zero need for sugar! It’s best made with frozen raspberries, which is the modern way of preserving food, and means we can enjoy raspberries all year round, even when they aren’t in season.

INGREDIENTS
  • 3 cups frozen raspberries
  • 1 tbsp chia seeds
METHOD
  1. Place raspberries and 1 tbsp (15ml) of water in a medium sized pot and place over a high heat. Place the lid on the pot and bring to the boil.
  2. Remove the lid and reduce the heat to low. Allow the jam to simmer for 20-25 minutes or until water has reduced and raspberries have broken down.
  3. Stir in chia seeds and transfer to a jar. Leave to cool with the lid off before storing.
