Radicchio, Pea & Raisin Salad With Flaxseed Vinaigrette

Flaxseeds are a powerful plant based source of omega-3’s, however whole flax seeds can be difficult to digest. And in fact can often pass through the digestive system untouched. Flaxseed oil is a great bioavailable way to take advantage of the anti-inflammatory properties of this seed, and it’s natural nutty flavour makes it a delicious base for salad dressings.

INGREDIENTS
- 2 cups sugar snap peas, trimmed and slices
- 1 head radicchio, leaves torn
- 2 avocados, sliced
- 100g feta, crumbled
- ¼ cup sesame seeds, toasted
- ¼ cup golden raisins
Flaxseed Vinaigrette
- 1 tbsp olive oil
- 3 tbsp Melrose Flaxseed Oil
- 1 lemon, juiced
- 2 tsp Dijon mustard
- 1 tsp basil, dried
- Salt and pepper, to taste
METHOD
- Prepare the dressing by combining all ingredients in a small bowl or jar.
- Place the snap peas and radicchio in a large bowl and pour in half the dressing, toss to coat and serve on a large plate.
- Top with avocado, feta, sesame seeds and raisins. Spoon over remaining dressing.
