Grilled Halloumi With Balsamic Strawberries And Basil
Halloumi is delicious on its own but when paired with something sweet, you really get a seriously intense burst of flavour into the mouth. It’s often served with honey but for something more fresh if used strawberries here to create that same sweetness with a hint of acidity that goes beautifully with rich halloumi.
If you find yourself with an abundance of strawberries, or if you need to use a whole lot in one go, I recommend making this dish alongside some other tasty fresh plates, for a little picking session.
For the best results, cut the strawberries into small pieces to allow that lime balsamic dressing to infiltrate with flavour. This recipe is best served immediately so the haloumi is in its best ooey gooey cheesy state. Enjoy!
Grilled Halloumi With Balsamic Strawberries And Basil

INGREDIENTS
- 1 lime, juiced
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- 2 cups strawberries, sliced
- ¼ cup basil, fresh, loosely chopped
- ½ cup mint, fresh, loosely chopped
- 300g haloumi, sliced
- ¼ cup almonds, toasted, chopped
- Olive oil, for cooking
- Salt and pepper to taste
METHOD
- In a large bowl, combine the lime, olive oil, balsamic vinegar, salt and pepper. Add the strawberries, basil and mint and toss to coat. Set aside.
- Heat a large pan over a medium to high heat and add a glug of olive oil. Grill the haloumi for approximately three minutes on each side, or until nicely browned. Serve on a plate.
- Top with strawberry salsa and almonds. Serve immediately.
