Easiest Chewy Banana Cookies
I developed these cookies following the popularity of my 3 Ingredient Banana Coconut Cookies… Which are incredible if you haven’t tried them.
But this almond version is gravity defying, which is my way of saying even though they don’t seem like they’ll work out, I mean how good can just banana and almonds be… The result is this chewy, sweet, cakey cookie that is healthy enough to eat for breakfast.
There is no sugar and they are only sweetened with banana, which as you’ll see caramelises perfectly in the oven creating that maillard reaction we all love of standard sugar filled cookies. This is the chemical reaction that causes sugar to brown in the oven, and release the aroma of *someones making cookies* into the house.
This is a great one for kids, both to eat and to make with them. Let them get their hands dirty mixing all the ingredients and roll them into the cookie shapes they like. The raw batter is completely safe to eat too, so no need to worry about sneaky cookie dough taste tests.

INGREDIENTS
- 2 cups blanched almond meal
- 2 tbsp coconut flour
- ½ tsp baking powder
- 2 medium overripe bananas, mashed
METHOD
- Preheat the oven to 180°C and line a baking tray with baking paper.
- In a large bowl combine the almond meal, coconut flour and baking powder. Whisk to ensure there are no lumps or clumps.
- Add in the mashed banana and mix to form a sticky dough.
- Roll into cookies using about two tablespoons worth of dough. They don’t spread much so you can shape them into cookies of about 1–2cm in thickness.
- Bake in the oven for 12–14 minutes until golden brown. Leave to cool for ten minutes then enjoy.
