Pulse pasta is simply pasta that is made from legumes and you’ll find all different kinds, like lentils, chickpeas, soybean, black bean and edamame. This recipe works with any kind of pasta. For the most aesthetic results, go for something lightly coloured or green.

INGREDIENTS
- 200g pulse pasta
- 1 cup cherry tomatoes, slices
Avocado Basil Sauce
- 2 medium avocados
- ¼ cup olive oil
- 2 cups basil, fresh
- 2 cloves garlic, crushed
- ½ lemon, juiced
- ¼ cup nutritional yeast
- Salt and pepper to taste
METHOD
- Prepare the sauce by combining all ingredients in a blender or food processor. If it is not combining, add a touch more olive oil.
- Bring a medium pot of water to the boil. Plunge in the pasta and cook according to packet instructions. Drain and add to a large bowl.
- Add the prepared sauce to the pasta and toss to combine. Add in the tomatoes and serve.
Notes
- If you have large avocados, use one and a half instead.
