2-Ingredient Chocolate Mousse

I posted this photo a while a go on my IG and SO MANY people asked me for the recipe! At the time I kind of just threw it together so wasn’t sure of the ratios BUT I finally tested and measured it.

It’s totally sugar free and high in fat which is great for me as a follow a low carb high fat/ ketogenic lifestyle. However a word of warning, it’s extremely rich. Despite the fact that I set it in two ramekins, in reality this recipe would leave me with 4 serves (or more!). Simply a spoonful as my lunch dessert is enough to get me by. (more on my views on this at the end of the page)

In fact, due to the saturated fat content, you’d probably feel fairly ill if you were to eat any more than this. I love having a “lunch dessert” #errday – something that’s high in fat, preferably saturated fat as it really sets me up to be able to go to dinner (or at least much later in the day) without getting hunger/ hanger/ cravings or falling into that trap of thinking about your next meal all day long. If you’ve ever followed one of those low fat/ low cal meal plans you can probably relate to this feeling – ughh.

2-Ingredient Chocolate Mousse

This simple chocolate mousse is totally sugar free and high in fat which is great for me as a follow a low carb high fat/ ketogenic lifestyle.

Cook time:

10 minutes

INGREDIENTS
  • ⅓ cup (80ml) coconut cream, canned*
  • 35g dark chocolate (85-90%)
METHOD
  1. Gently heat coconut cream over the stove or in the microwave. It doesn't need to be scalding hot, just gently heated. Transfer to a bowl.
  2. Stir in the chocolate and keep stirring until you get a smooth mousse-y consistency. Spoon into ramekins and place in the fridge.
 
Notes
  • For the best results, use Ayam brand coconut cream. 
  • How long you leave it in the fridge will change the consistency depending on what you like. Anywhere upwards of 30 minutes is good - at which time it will still be soft and silky. More than that it will be a little harder - it's a matter of preference!
