I’ve been an MCT fan for years. I first discovered it about 5 years ago when I read The Bulletproof Diet by Dave Asprey, and that’s when I fell in love with bulletproof coffee. Quickly my breakfast changed from overnight oats to bulletproof coffee and I loved it.

MCT Energy Bars

This recipe is my answer to energy bars. They are keto and low carb and have the MCT for a major boost of energy which I love to get me through the afternoon.

My favourite MCT is from Melrose Health.

INGREDIENTS
METHOD
  1. In a large bowl combine the protein powder, coconut flour, cacao powder and desiccated coconut until no lumps remain. 
  2. In a small bowl combine the nut butter, coconut oil and MCT oil until smooth. Pour into the dry mixture and combine with your hands. 
  3. Stir in the almonds and chia seeds and press into a lined loaf tin. Place into the fridge or freezer while you make the topping. 
  4. Remove from the fridge and slice into 16 bars.
 
Notes
  • This recipe works with any nut butter.
