Sesame Salmon + Kimchi Kale Salad

I’m all about less ingredients with max flavour, and having flavourful ingredients like the Green St Kitchen Kimchi in the fridge makes it super easy to make a flavourful meal without the fuss. I totally believe that physical and mental health starts in the gut, and the best way to look after it is using food as medicine. The raw gut-loving probiotic goodness that comes in every jar of their kimchis is the perfect way to boost the nutrition of your meal, plus this is my favourite way to cook salmon! Dig in!

Serves: 2

Prep Time: 15 minutes

Cook Time: 30 minutes

2 fillets salmon

1 tablespoon tamari

1 teaspoon toasted sesame oil

½ bunch Tuscan kale

1 tablespoon apple cider vinegar

1 tablespoon olive oil

¼ cup Green St Kitchen Thai Chilli + Galangal Kimchi

1 tablespoon hemp seeds

Sea salt and black pepper

  1. Preheat the oven to 120C.

  2. In a small bowl, combine the tamari and sesame oil. Place the salmon in a roasting dish and pour over the tamari mixture, ensuring each side is well coated.

  3. Place in the oven for 30 minutes.

  4. Meanwhile, prepare the salad by placing the kale in a bowl with a generous pinch of salt, apple cider vinegar and olive oil. Using your hands, massage the kale until broken down and wilted. Toss through the kimchi and sprinkle over hemp seeds.

  5. Serve the salmon and salad with some fresh coriander and enjoy!
