Walnut Mini Muffins... GF, DF, SF, Keto, Low Carb

Prep Time: 15 minutes

Cook Time: 40 minutes

Ingredients

1 cup blanched almond meal 

1/2 cup chopped walnuts 

1.5 tsp baking powder

1 tsp cinnamon

1 pinch salt 

2 tbsp coconut oil 

1/4 cup milk of choice 

2 eggs, beaten 

Method 

  1. Preheat the oven to 180 and grease or line a mini muffin tin.

  2. Combine dry ingredients in a bowl then gently mix in wet ingredients.

  3. Fill muffin tin about 3/4 full and top with extra crushed walnuts.

  4. Bake for 40 minutes.
