Almond Chip Choc Chunk Cookies... Sugar-free, keto, gluten-free and dairy-free
Can you believe I don’t have a choc chip cookie recipe on my website!? I mean it’s the OG cookie! I’ve got everything from Cookie Dough Slice to Black Tahini Cookies to CBD Spiked Cookie Dough to Hemp Protein Peanut Butter Cookies… But no good old choc chip cookies.
In fact, in my dessert eBook Create, I’ve even got Melting Moments, Baked Halva Cookies and Peanut Butter Choc Yoyo’s… But still no choc chip cookies. Well that’s about to change.
You may have seen me harp on about my 2 ingredient magic cookies, it’s the base I use for ALL of my cookies and once you taste these, you can chuck away any other recipe you have for gluten-free, grain-free and sugar-free cookies. Yep.. Chuck em. You don’t need that kind of clutter in your life. I make some version of these cookies all the time and they’ve been described as “orgasmic”, “wizardry”, “sorcery”, “melt in the mouth”, “fucking ridiculous” and “omg what the actual fuck who are you”.
Anyway… Here I’ve used Well Naturally chocolate as my chocolate chips. Most of the time I use a 100% cacao chocolate (I get it from Scoop Wholefoods in Bondi but they won’t tell me who the supplier is) or I use anything thats 85% or above (90 or 95% is my fave) - most of the time either Lindt or Alter Eco.
But the thing is, these chocolates are rich and dark and I know a lot of palates aren’t accustomed to it yet. If you have read my eBook Create, you’ll know that I am very strict about what “sugar-free” sweeteners I use as I don’t like anything artificial or even worse, filled with sugar. Yep most “sugar-free” ingredients are actually pure sugar (glucose, fructose, sucrose) which is why you never see me using dates, maple syrup or rice malt syrup. The Well Naturally chocolate is sweetened with stevia and erythritol, and it honestly tastes like Cadbury, so it’s a good option for people that need to be converted to the sugar free life.
Although this recipe works with any chocolate!
1 cup peanut butter or cashew butter
2 bars Well Naturally Almond Chip Dark Chocolate, or your fave choc
1. Preheat the oven to 160℃ and line a baking tray with baking paper.
2. In a large bowl and using a wooden spoon, combine peanut butter and egg. You may wish to use your hands if it is not combining properly.
3. Roughly chop the chocolate using a sharp knife and add 3/4 of it into the cookie dough. Combine.
4. Using your hands, carefully shape into 16 cookies and place on the prepared tray, sprinkle the extra chopped chocolate on top of each cookie.
5. Bake in the oven for 15 minutes. Leave to cool completely before eating
