Ultimate Paleo Breakfast

I prefer to start my day with a big brunch instead of a small breakfast... If the timing is right, I'll wait til about 11 and make a delish meal like this one. I use whatever veggies I get at the market that morning, pair it with some poachies and of course fermented veggies!

INGREDIENTS

  • Field mushrooms
  • Asparagus
  • Fresh rocket
  • Eggs
  • Avocado 
  • Sauerkraut

METHOD

  1. Roast the mushrooms and asparagus, drizzled in olive oil, salt and pepper in the oven for about 20 minutes. Serve with fresh rocket, poached eggs, sliced avo and sauerkraut.
